Farfalle to Offer Exquisite Dining

Something exquisite is taking flight at Casino Niagara. Farfalle,
the fine dining restaurant in the complex, promises an experience as enchanting as its name.

Italian for butterfly, Farfalle is named in honor of the Niagara Parks Commission's butterfly conservatory slated to open later this year.

"It will be comparable to the best restaurants in Europe or in cities like Toronto and New York it will be that phenomenal," says Mark Walpole, the casino's executive chef and local celebrated culinary expert.

This quality, he said, will complement the existing fine dining restaurants in the region.

Embodied in the decor of Farfalle will be the delicate motifs of butterflies, yet a sleekness also adds to the atmosphere. With seating for 130, the layout includes an entrance with a glass wall showcasing cold wines, the full dining area and cozy sunken booths at one edge of a raised
floor.

The restaurant's menu, which has been designed with the assistance of Celestino Posteraro, owner of Toronto's popular Favoloso Ristorante and Bar, will feature Mediterranean-style entrees prepared with an abundance of fresh herbs, olive oil and a distinct Italian flair.

As a complement to the menu, Farfalle's boasts an extensive wine list with selections from Italy, California and Niagara. With a definite Niagara flair, staff will be trained to suggest to the customer a comparable local vintage to that of an import.

"Niagara's wines are celebrated internationally, and we want to do everything we can to encourage people to try them," said Walpole.
